Swiss Strawberry and Coconut Roll

In our family we always give a special preference to baking. And that’s why often in our menu you can see different kinds of pastry, cakes and pies.

Today my daughter Nataly make for you delicious Swiss Roll with tender airy texture, light coconut cream and juicy sweet and fresh strawberry. This dessert can be perfectly served at the end of traditional family dinner or as a sweet meal to friends’ party.

  1. 95 gr. wheat cake flour
  2. ¼ cup coconut flakes
  3. 1 tsp. coconut extract
  4. 4 eggs
  5. 1 tsp. baking powder
  6. ½ tsp. salt
  7. 28 gr. melted coconut oil
  8. 150 gr. organic white sugar
For cream filling
  1. 150 gr. fresh strawberries
  2. 300 ml whipping cream
  3. 200 gr. Mascarpone or Philadelphia cream cheese
  4. 75 gr. icing sugar
  5. 1 tsp. coconut extract
  6. 1 tsp. vanilla extract
  7. ¼ cup coconut flakes
  1. Preheat oven to 180 degrees C (356 degrees F). Line the baking tray with baking paper.
  2. Whisk eggs with sugar until fluffy and pale consistency. Add coconut extract and oil, mix until combine.
  3. Sift flour and baking powder into egg mixture, add salt and give a good stir. Pour the batter on top of lined baking tray and level with spatula. Knock the tray on the table to remove air bubbles.
  4. Bake into preheated oven 12 to 15 minutes. Carefully transfer hot roll to kitchen towel sprinkled with icing sugar. Be sure, that the baking paper is on top. Remove the baking paper and sprinkle the roll with icing sugar, turn on another side.
  5. Whip cream with icing sugar until strong peaks, add mascarpone, coconut flakes and coconut extract. Mix well until combine.
  6. Spread a nice layer of prepared cream over the roll. Cut the strawberries in pieces and put on top of cream layer, wrap swiss roll in baking paper, tightly close the edges and put in fridge for 2 to 3 hours.
  7. Put the Swiss roll on the serving plate, sprinkle with icing sugar, decorate with strawberry, slice into pieces or serve like that!
