Simple vegan lunch with vegetables in 15 minutes

Let us show you easiest way how to make Simple Vegan Lunch just in 15 minutes. This recipe is pretty delicious and you can easily find ingredients in any store. The nice combination of spices and fresh flavors of vegetables, well balanced texture and don’t forget about the value which you get from eating meals prepared with vegetables. 

We used spiced chili oil but if you don’t like spicy food replace it with olive oil or any other kind of vegetable oil. I also highly recommend to properly wash ingredients before cooking, especially green peas. Ingredients
  1. 4 tbsp. hot chili oil
  2. 2 cups sliced eggplants
  3. 1/2 sliced red bell pepper
  4. 1/2 sliced orange bell pepper
  5. 1 sliced onion
  6. 1 cup peas
  7. 1 large chopped tomato
  8. 1/2 chopped herbs (parsley and dill)
  9. 1 tbsp. brown cane sugar
  10. 1/2 tsp. Turmeric
  11. 1/2 tsp. Ground ginger
  12. 1 tsp. Smoked paprika
  13. 1/2 tsp. Salt
  14. Pinch of ground black pepper
  15. Sesame seeds
  16. Cooked buckwheat
Instructions
  1. Add chili oil into frying pan. Preheat it. Add sliced eggplants. Stir fry for 5 minutes. Add onion cook for 2 minutes. Add bell peppers and stir fry vegetables for 5 minutes. Season them with spices, add sugar and mix well. Cook for 2 to 3 minutes, then add tomato. Mix well and cook for 5 minutes more.
  2. Add peas and herbs, give a good stir and after 1 to 2 minutes remove from the heat. On the serving plate put some cooked buckwheat. Add stir fried vegetables, sprinkle them with sesame seeds and serve with Iced Peach Tea.

Ingredients
  1. 2 ripe peaches
  2. 50 gr. sugar
  3. 1 tbsp. lemon juice
  4. 4 tbsp. water
  5. Brewed black Tea
  6. Mint leaves
  7. Ice cubes
Instructions
  1. In a saucepan add chopped peaches, sugar, lemon juice and water. Mix well and place on the medium heat. Bring to the boil and cook for 7 minutes until mixture is thickens. Remove from the heat and cool at room temperature.
  2. Put ice cubes into serving glass. Pour peach jam on top. Add brewed tea and mix well, decorate with mint leaves and serve.
