For salad
  1. 1 broccoli head
  2. 1 large grated carrot
  3. 1 can of red kidney beans
  4. Handful of toasted walnuts
  5. Red onion
  6. Red apple
For dressing
  1. 1 cup of yogurt
  2. 1 tsp. of lemon juice
  3. ½ tsp. of garlic powder
  4. 1 tsp. of wholegrain mustard
  5. ½ tsp. of English mustard
  6. Sea salt and black pepper
  7. 1 tbsp. of honey
  8. 30 ml of olive oil
  9. 3 cloves of garlic
Instructions
  1. Slice the red onion. Transfer to mixing bowl. Drizzle with juice from half of lemon.
  2. Cut broccoli into bite – sized pieces and put into salad bowl with onion. Slice the apple into matchsticks and transfer to other prepared ingredients.
  3. Add carrot and red kidney beans to salad bowl, drizzle with lemon juice.
  4. Chop the garlic.
  5. Combine all ingredients for dressing and mix well.
  6. Add dressing to salad and give a good stir until everything is well coated. Garnish with toasted nuts and serve.
