Chocolate Cake

There is a simple but very delicious cake for you and your family with two variations of decorating.
Christmas and New Year are two very important family holidays in our lives. It is a time when your family getting together and give presents, telling stories and share their love with everyone.

Chocolate Cake

    For cake batter:
  • 180 grams of all – purpose wheat flour
  • 4 eggs
  • 60 grams of cocoa powder
  • 5 tablespoons of milk
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of baking powder
  • 150 grams of walnuts
  • Pinch of salt
  • Pinch of nutmeg
  • 100 grams of softened butter (sliced into cubes)
  • 290 grams of caster sugar
  • Zest of half of orange
  • For ganache:
  • 200 grams of dark chocolate
  • 200 grams of heavy cream
  • Vanilla pod or vanilla extract
  • For syrup:
  • 200 ml of orange juice
  • 100 grams of caster sugar
  • 50 grams of dark rum
  • 1 teaspoon of vanilla extract
  • For Italian custard:
  • 500 ml of milk
  • 5 egg yolks
  • 80 grams of sugar
  • 25 grams of all – purpose wheat flour
  • 25 grams of cornstarch
  • Vanilla pod or vanilla extract
  • 30 grams of cold butter (sliced into cubes)
  • 250 ml of whipping cream
  • 200 grams of dark Swiss chocolate
  • For decorating:
  • Flowers
  • Handmade chocolates
  • Dried orange chips
  • Small hand painted meringues
  • Coconut flakes
  • Silver and gold decorating powder


    Cake batter:
  1. Mix all dry ingredients in food processor.
  2. Beat butter in a bowl, add half of sugar into two or three batches and whip until fluffy and pale.
  3. Put eggs into mixers bowl and whisk. Add remaining sugar, vanilla extract and Continue beating for 10 minutes.
  4. Grind some nutmeg into mixture and Add zest of orange.
  5. Add 4 tablespoons of egg mixture into whipped butter and mix until combine. 6. Add mixture into mixers bowl with eggs and Whisk on the high speed.
  6. Add dry ingredients.
  7. Then stir in 5 tablespoons of milk and mix once more. Preheat oven to 180 degrees C (356 degrees F).
  8. Divide cake batter into two parts. Line two baking tins (20 cm) with baking paper, grease with butter and sprinkle with some flour.
  9. Put batter into two similar baking tins and bake for 25 to 30 minutes.
  10. Cooking time depends of your oven type.

  12. Remove baking tins from oven and place them on the wire rack, completely cool them and cover with plastic wrap. Put in refrigerator overnight.
  13. This step is important because chocolate biscuit cake need some time to “ripe”. It also helps cake to hold its form and not crumble.
  14. Chocolate ganache:
  15. Mix heavy cream with vanilla extract or vanilla pod in a saucepan. Place it on the medium heat and bring to a boil, but not boiling it.
  16. Break chocolate into pieces. Add hot heavy cream on top of chocolate and set aside for 5 minutes. Slowly start to stir the mixture until combine. Cover the bowl with ganache with plastic wrap and put in refrigerator overnight.
  17. Orange syrup:
  18. Usually I make not very sweet syrup because I add several tablespoons of apricot jam.
  19. However, at this time I add in freshly squeezed orange juice soft brown sugar. Bring this mixture to a boil. Cook syrup for 10 minutes. Add dark rum, stir and remove from the heat.
  20. If you will serve this cake to kids, it is recommended to cook syrup for 5 minutes more to remove flavor of alcohol. Then remove it from the heat and completely cool.
  21. Italian custard:
  22. Add milk into a pan, add 1 tablespoon of sugar, vanilla and coffee extract and place it on the medium heat.
  23. Put remaining sugar into a bowl with egg yolks and beat until fluffy and pale (approximately for 10 minutes). Sift flour and cornstarch into eggs and mix until combine.
  24. Bring milk to a boil but not boiling it. Slowly add it into egg mixture, stirring all time. Leave some milk in pan.
  25. Pour prepared mixture into a pan with remaining milk and place it on the medium heat.
  26. Bring to a boil, stir for one minute and remove from the heat.
  27. Add cold butter and mix until combine.
  28. Break chocolate into pieces and put it into large bowl. Add hot custard mixture on top of chocolate and set aside for a couple of minutes.
  29. Stir until combine and cover with plastic wrap, put in refrigerator until custard is completely cools.
  30. Whip cream until strong peaks. Remove custard mixture from fridge and thoroughly whisk it with hand whisk.
  31. Carefully add whipped cream into custard and slowly stir until combine. We need to keep the soft texture of custard.
  32. Cake construction:
  33. Take cake layers out of refrigerator and cut each of them in two parts with same size.
  34. Line the baking pan with baking paper and put the first layer on the bottom of baking pan.
  35. Grease first layer with syrup.
  36. Put Italian custard into piping bag and pipe some custard on top of the first layer. Use a round piping tip.
  37. Put the second layer on top of it. Repeat the same process until last cake layer.
  38. Do not grease the last cake layer with syrup. Just add some custard on top, smooth it with spatula, cover with baking paper and put in refrigerator at least two hours.
  39. Remove cake from refrigerator and cover with chocolate ganache. Dust the sides of cake with coconut flakes. Make some decorations on top using the remaining ganache.
  40. We prepared two variations of cake decorating special for you. However, you can choose and make your own design of cake.
  41. For first variation we used homemade chocolates and orange chips. We will add the recipes soon.
  42. For second variation we made handmade chocolate candies and hand painted meringues (the recipes will be available soon).
  43. In addition, we use gold and silver decorating powder, which you can buy in supermarket or online.
  44. To make a paint for meringues just mix liquid and gel food colors, add few drops of water and stir until combine. Carefully take one meringue and make different patterns using a thin brush.
  45. Be creative and draw whatever you like, use your creativity and imagination.

Piece of cake (2) P.S. We recommended you to prepare this amazing delicious cake with rich chocolate flavor and soft creamy texture. My children like when cake layers richly greased with not very sweet syrup but you can do as you want. It is desirable to chop walnuts into big chunks. Thank you!
