Spicy rice noodles

My daughter likes Asian food so much, because it spicy and savory. Therefore, I decide to make this meal for her. She was happily surprised. Now I want to share this recipe with you, my lovely readers.

Spicy noodles with vegetables

  • Rice noodles – 500 grams
  • 1 eggplant
  • 1 zucchini
  • 1 carrot
  • 1 turnip
  • 1 onion
  • 3 cloves of garlic
  • Yellow bell pepper
  • Red bell pepper
  • Godji berries
  • 2 – 3 sprigs of fresh coriander
  • A little bit of sour salad leaves
  • ¼ of celery stick
  • 2 sprigs of spring onion
  • 3 – 4 tbsp. of cornstarch
  • 1 – 2 tsp. of sesame oil
  • 3 tomatoes
  • 1 tsp. of pink Himalayan salt
  • ½ tbsp. of smoked paprika
  • ½ tsp. of hot chili flakes
  • ½ tsp. of curry
  • ½ tsp. of tandoori masala spice
  • 1 tbsp. of roasted sesame seeds
  • 1 tbsp. of sweet chili sauce
  • Extra virgin olive oil – 50 ml
  • ½ of lemon
  • 10 grams of ginger
  • Fresh herbs
  • Sea salt, freshly ground black pepper – for seasoning


  1. Wash godji berries and dry.
  2. Wash vegetables and peel. Remove the core and seeds from bell peppers. Cut onion into big chunks.
  3. Zucchini, eggplant, carrot, celery, topinambur and bell peppers slice into large pieces. Put the non – stick frying pan the medium heat, add olive oil.
  4. Sprinkle zucchini, eggplant and topinambur with salt, peppers and spices, dust with cornstarch and put in frying pan. Fry until golden on each side, then remove from the heat and put vegetables on the serving plate lined with paper towels. Remove the pan from the heat.
  5. Add olive oil into another frying pan and place it on the medium heat. Bring to simmer. Add onion, celery, carrot and bell peppers. Season with salt, pepper and spices and add some grated ginger. Stir and drizzle with orange juice and sweet chili sauce.
  6. Finely chop the garlic, herbs, salad leaves and spring onion.
  7. Cut the tomatoes into pieces and add it to vegetables. Add chopped garlic with herbs. 9. Stir and cook for 1 minute, then remove from the heat. Drizzle with sesame oil and mix until combine.
  8. Boil noodles in hot boiling water for 8 – 10 minutes, add lemon and then drain the water.
  9. Put noodles on the serving plate. Add vegetables and godji berries. Sprinkle with chopped herbs and sesame seeds.
  10. Drizzle with a little bit of sesame oil and serve.
