The key thing in this recipe is to choose proper ingredients. For example, I highly recommend you to buy high quality dark chocolate to achieve that delicate flavor. Also, choosing right type of coconut milk is important too. You should use only thick coconut milk, not the light one, because its texture is not creamy enough.
You can decorate this chocolate cake as you wish: I prefer to use some chopped nuts to add some crunchiness and dust it with cocoa powder to balance out the flavor, but you can use anything you want. Today we are going to make the fluffiest Vegan Gluten Free Mini Carrot Cakes ever! These adorable cakes are super easy to make. Another 20 to 25 minutes and you will enjoy delicious sweet treat with a glass of Iced Latte. They are so soft and tender and every bite is melts into your mouth.
For these Carrot Cakes you can use any kind of glaze and decorating. For example, you can use caramel sauce or melted dark chocolate, glaze with blood orange juice, chopped nuts, fresh berries or chocolate chunks as toppings. Today we are going to make delicious meal, also known as Spring Rolls. Spring rolls usually made from rice paper wraps stuffed with vegetable filling and rice noodles. This dish is really easy to make. All you need to do is to slice all vegetables, cook some noodles and make the rolls.
These rolls can be served as a main course or as a snack during the dinner or maybe fast lunch. You can choose any kind of sauce: hoisin, teriyaki sauce, sweet chili or special spring roll dipping sauce.
Also, it is very good option to fry these rolls in vegetable oil. Just preheat some oil in a saucepan until it reach 180 °C (356 °F). Put spring rolls into saucepan and fry until golden. For these rolls you can use not only rice paper but also thin spring roll wrappers made from dough.
Usually rolls are savory meal, but you could make them sweet as well. Just replace vegetables with fruits and berries and serve them with sweet dipping sauce. I also recommend to make some refreshing drinks like Ice Cold Matcha Latte or Iced Peach Tea.

The taste of dairy free white vegan chocolate is pairing well with sweet juicy berries and fresh fruits, topped with apricot glaze. Completely vegan and 100 % natural ingredients.
We use apricot glaze with brandy for some reasons. That will add some delicate flavor and texture to our tart and make fruits and berries look fancy. You could serve it with various ice cold drinks but we prefer to use lemonade or non alcoholic mojito to balance the sweetness of the meal.

Also, to make them fancy we add a bit of dried fruits and some dark rum. It gives some extra flavor to muffins. Plus, dried fruits are super healthy and good for our body especially for brains, so we often add them in various recipes (mostly in sweets or salads).

When I want to make something delicious but do it in few minutes, I usually use such recipes as this one. It is fast, easy, don’t require so much time and various ingredients. But all these meals are tasty and healthy, so you won’t need to worry about that.
Try to cook them and you will definitely like them!

Japchae is a very popular Korean dish (sometimes non – vegan) but we are fully veganised this recipe and now you can easily enjoy simple but amazingly delicious and nutritious meal.
Japchae is a stir – fried vegetables with chewy glass noodles and some of other ingredients. The key thing is to cook vegetables and noodles perfectly to get more flavours and nice texture. With every bite you should feel each vegetable mixed up with some delicious sauce and potato starch noodles.
How to serve them?
The most traditional way to serve that dish is to make steamed buns and serve them together. Fluffy warm steamed buns taste like a small clouds combined with chilled sweet and salty chewy japchae – what a pleasure to eat this in cold winter day with cup of hot herbal tea. However, you can cook this dish in hot summer, just chill buns and japchae and enjoy it with a glass of iced tea or coffee.
Let’s make this absolutely delicious meal! Also, you can cook japchae without adding spicy stuff if you don’t want to.
First of all let’s make japchae – stir – fried vegetables. Thinly slice carrot, bell pepper, red onion and green onion. Finely mince garlic and hot chili pepper. Peel and cut mushrooms into pieces. Of course, it is not necessary to pee mushrooms but I always do it just in case.
Add a bit of olive oil on preheated frying pan and stir – fry red onion for 3 to 4 minutes on high heat, season with some soy sauce, drizzle with a little bit of sesame oil and sprinkle with sesame seeds. Don’t forget to add a pinch of brown sugar.
Do the same thing with carrots, bell peppers, mushrooms and green onion. When you cook mushrooms, add minced garlic clove and cook for couple minutes.
Pour water into a pan and bring it to the boil. Add glass noodles and place on top of pan a colander with spinach. Cover with lid and cook for couple minutes.
After two minutes, remove the colander and put spinach in ice cold water. Give a good stir to glass noodles, cover and cook for 6 minutes more. Drain the water, slice noodles with scissors and transfer to bowl.
Drain the water from spinach and roughly chop. Add to the bowl.
Second, the dressing. Pour olive oil to preheated frying pan. Add chopped chili pepper and soy sauce, mix well. Add the remaining ingredients, give a good stir and let it simmer for couple minutes.
Remove from the heat and add prepared dressing to bowl. Give a good stir and keep in fridge.
And finally we can now start making buns. However, you can make the dough at first and while it is rising, cook the japchae.
Okay, the most important part for making a perfect dough is to check your yeast. If they won’t rise, you should get the new one or otherwise your buns will not rise.
Add warm water, yeast and sugar into a mixing bowl, give a good stir and cover with clean cloth. Let it rise for 5 to 10 minutes. Then add warm coconut milk from can, coconut yogurt and oil, mix until combine.
Add sifted flour and give a good stir. When dough start to stick together, add salt and keep mixing. Knead dough until it become smooth and elastic for about 10 to 15 minutes.
Cover with cloth and let it rise in warm dry place for 1 hour. Knead the dough one more and cut in two pieces.
Take one half and divide it into 5 parts. Shape balls and put on paper, cover with cloth.
Take another half of dough and roll it into rectangle, sprinkle with some brow sugar and roll. Cut into small pieces. Put them on paper liners.
Cover with cloth and let them rise for 30 to 40 minutes.
Bring the water to the boil. Put buns in bamboo steamer, cover with wet cloth and lid and cook for 15 minutes.

It is very easy to make, but I highly recommend you to follow the recipe steps. For example, the pizza sauce it is better to cook in advance, completely cool and put in fridge for a while.

However, if you don’t cook it before you start making pizza dough, don’t worry. Sometimes we made it during the dough rising.
Also, it is better if you sprinkle the surface where you are planning to roll the dough with some semolina (don’t use to much). It will helps to give to pizza nice crispy golden crust.

However, before we even start cooking our delicious Vegan Chocolate Cream Tart, let’s know more about chocolate benefits, how to choose it and cook it properly.
Chocolate: Pro and Cons
All types of chocolate are made from cocoa beans. The good quality chocolate should contain several main ingredients (without them you can’t say that it is a real chocolate).
First of all, cocoa butter. 🤔
If you want to buy good quality chocolate with rich taste for cooking, it should have a cocoa butter.
The second thing is a cocoa mass – a solid or semi – solid product which is using to make chocolate (with some additional cocoa butter).
There are existing so many different kinds of chocolate with various flavours: nuts, extracts (like vanilla or coconut), liqueurs and fillings (chocolate ganaches, fruit and berry purees, cream and etc.).
The chocolate have a long story. Many centuries ago, Olmec Indians used hot chocolate as sacred drink. And the recipe of that chocolate is too far from our modern version.
In XIX century, chocolate was sell into pharmacy like a refreshing drink for gain energy.
Many scientists recognise that chocolate positively affects on the body by improving the mood and producing the hormones of happiness – serotonin and endorphins. 😌Eating chocolate makes you feel happy.
Nevertheless, we shouldn’t overdo with this sweet dessert. The high consumption of chocolate is raising the amount of glucose in blood and it is not good for our metabolism. 😔
That is why it is recommend to eat chocolate dessert only in first half of the day and in small portions. ☺️
How to store chocolate and how to buy it properly
As we mentioned before, the high quality chocolate must contain two ingredients: cocoa butter and cocoa mass. If it’s have it, that means you found what you are looking for.
Therefore, I advice you to not buy the cheap chocolate because it can have some harmful chemicals.
To keep chocolate you will need to choose dry but cold dark place. It will helps not to melt the chocolate.
Now it is time to make delicious and simple vegan dessert – Chocolate Cream Tart.
The first step is prepare the dough. I used the food processor to make it faster, but it is okay if you just mix all ingredients together into a bowl and then knead it until it become smooth and elastic.
Make sure that the tart crust is well chilled because if it is not, it will be pretty hard to transfer it to tart pan. 😊So, let is sit in fridge at least 1 hour.
The next step is making two fillings: chocolate cream and chocolate ganache.

For decorating tart you can use anything that you want: different berries, nuts and etc, but try to keep it as minimalistic as you can.
Tofu cheese is a plant based product, which have a lot of benefits for our organism, especially for vegans and people who have lactose intolerance.
Tofu cheese with its long history, is rich of protein, vitamins and minerals and can easily replace many dairy products. Soy proteins are positively affect on our body, help to reduce the cholesterol in blood. It is also perfectly strengthens the immune system and reduce the risk of catching cold. 😊💚
Tofu contains protein, calcium and iron. It is great for athletes to gain muscles. It also can be included in ration for people who want to lose the weight, because tofu is a low calorie product.
However, we shouldn’t forget how important to not overdo with anything even they are healthy. ☺️Just keep that in mind.
So now we are coming to one of the most important parts.
Where is to buy Tofu and how to choose it? 🤔
However, You can buy Tofu in almost any supermarket or grocery store, but you should to choose it properly. Especially pay attention to dates, it contents.
Japanese and Chinese women are use Tofu in cosmetology 💕😌. They learned how to whiten and rejuvenate the skin, because the consumption Tofu for food is slow down the aging process of skin, improve its and fill the skin with energy and health.
You can use it for making a good mask for making your skin smooth and fresh. 😉❤️😉
For making mask you will need only three simple ingredients:
1 tbsp. Tofu cheese
1 tsp. Olive oil
1/4 tsp. Lemon juice
Combine all ingredients together. Mix well and make sure that there is no lumps in mixture.
Wash you face and thoroughly clean it from makeup.
It is highly recommend to steam you face a little bit with linen cloth.
Pour some clean water into pan, add 1 tbsp. Dried camomile, bring to the boil, remove from the heat and cover with lid. Set aside for several minutes, then heat it up about 39 – 40 °C, remove from the heat and soak linen cloth in prepared camomile mixture. Squeeze it a little bit to remove excess liquid and put it on your face. Wait for 5 to 10 minutes, then remove linen cloth and spread the prepared tofu mask on your face, slightly tap it in your skin with your fingers.
Wash it after 10 – 15 minutes. You will see the difference after fist usage, but more noticeable effect will be after one month. Do this mask once in a week and after your skin will be bright and smooth! 😍
